Wild Rice Pilaf with Crispy Prosciutto, Cherries & Squash

  • 1 sweet onion, chopped
  • 2 tablespoons butter
  • 2 ½ cups butternut squash, cubed
  • ½ cup dried cherries
  • ½ cup toasted pecans
  • 1 teaspoon allspice
  • 4 tablespoons maple syrup
  • 2 cups chicken broth
  • 4 cups wild rice, cooked
  • ½ pound DI LUSSO® Prosciutto Ham
  • Salt and pepper, to taste


Preheat oven to 350° F. Sauté chopped onion in butter. Add cubed butternut squash, dried cherries, toasted pecans, allspice, maple syrup and chicken broth. Simmer until squash is soft. Mix in cooked wild rice and simmer for 5 minutes. Salt and pepper to taste.

Toast DI LUSSO® Prosciutto Ham in the oven on a parchment paper-lined baking sheet until crispy, about 3-5 minutes. Crumble crispy prosciutto into rice pilaf and simmer for 2 minutes. Garnish with extra cherries and toasted pecans.
