Summer Roll Bites

  • 12 round rice paper wrappers
  • 4 oz dried thin rice noodles, cooked and drained
  • 2 cups shredded romaine lettuce
  • 1/4 pound DI LUSSO┬« Seasoned Roast Beef
  • 1/4 pound DI LUSSO┬« Oven Roasted Chicken Breast
  • 1/3 cup julienned carrot
  • 1/3 cup julienned cucumber
  • 1/3 cup julienned red pepper
  • 1/2 cup fresh cilantro leaves
  • Fresh mint for garnish, chopped
  • Bottled sweet chili sauce for dipping


Sprinkle water over a paper towel and place on cutting board. Fill shallow dish or pie pan with hot water. Place one rice paper wrapper in water about 1 minute, until pliable. Gently remove wrapper from water and place on damp paper towel.

Starting at closest edge of wrapper, form a row of about 1/4 cup noodles. On top of noodles, arrange about 1/3 cup shredded lettuce. Add beef, chicken, carrot, cucumber and red pepper. Sprinkle with cilantro. Starting at near edge, roll up wrapper, stopping after the first turn to tuck in sides. Continue to roll up tightly, then set seam side down on platter, keeping rolls from touching. Repeat with remaining wrappers. Garnish platter with chopped mint. Serve immediately with dipping sauce, or cover with moist paper towels topped with plastic wrap and refrigerate. To serve, cut each roll in thirds
