Mini Breakfast Buns

  • 8 crusty bread rolls
  • 2 tablespoons butter, melted
  • Salt and pepper
  • 1/4 pound DI LUSSO® Corned Beef, diced
  • 1 red pepper, diced
  • 1 small white onion, diced
  • Pre-cooked seasoned hash brown potatoes
  • 8 eggs
  • Fresh parsley, minced


Heat oven to 350°F. Slice off the top of each roll and scoop out the soft bread inside, leaving the sides of rolls intact. Brush the inside of each roll with melted butter and season with salt and pepper.

In large bowl, mix diced DI LUSSO® Corned Beef, red peppers, potatoes, onions. Divide filling between the 8 hollowed out buns. Crack an egg on top of each bun, season with salt and pepper and fresh minced parsley and place on baking sheet. Bake 10 to 12 minutes before covering the pan loosely with foil. Bake an additional 20 to 25 minutes or until the egg is just set.
