Mexican Torta

  • 4 Mexican bolillo or crusty rolls, split horizontally
  • 1/2 cup refried beans, slightly heated
  • 1/4 pound DI LUSSO® Pepper Jack Cheese, sliced
  • 1/2 pound DI LUSSO® Cajun Style Roast Beef, sliced
  • 1/2 cup fresh arugula
  • 2 tablespoons red onion, thinly sliced
  • 1 avocado, pitted, peeled and thinly sliced
  • Fresh lime juice

Directions

Spread bottom half of each bolillo with 2 tablespoons refried beans. Top with cheese, roast beef, arugula, a red onion slice, and avocado. If desired, squeeze a small amount of fresh lime over sandwich.
