Asian Cucumber Rolls

  • 1 English cucumber
  • 1/4 cup creamy peanut butter
  • 1/4 cup honey
  • 2 tablespoons soy sauce plus 2 tablespoons water
  • 1 tablespoon lime juice
  • 8-10 slices DI LUSSO┬« Seasoned Roast Beef
  • 5 baby carrots, julienned
  • 1/2 red or yellow bell pepper, julienned
  • 5 green onions, julienned
  • 5 radishes cut into thin slices
  • 1/3 cup baby arugula


Using vegetable peeler, cut cucumber lengthwise, 4 to 5 slices from each side. Lay cucumber slices on top of paper towel. In small bowl, combine peanut butter, honey, soy sauce, and lime juice. Place 1 slice roast beef over 1 slice cucumber, centering meat on cucumber slice. using pastry brush, brush bottom half of meat with peanut sauce. Place julienned carrots, pepper and green onion on upper half of meat slice. Fold up bottom half of meat over veggies along the bottom edge of cucumber. Carefully roll one end of cucumber over meat and veggies. Secure with toothpick standing roll up. Repeat with remaining cucumber strips, meat and veggies. Place radish slices and arugula leaves in rolls. If not serving immediately, chill until ready to serve. Serve with additional peanut sauce and or ponzu sauce.
