Ingredients:

  • 2 Roma tomatoes, cored and cut in half lengthwise
  • 1 teaspoon chopped fresh basil
  • 1 teaspoon chopped fresh thyme
  • 8 slices multigrain bread
  • 1/2 cup spinach and artichoke dip
  • 1/2 pound DI LUSSO® Roast Beef, sliced
  • 8 slices DI LUSSO® Provolone Cheese
  • 2 tablespoons plus 1/2 cup light olive oil, divided
  • Salt and pepper, to taste

Procedure:

  1. Heat oven to 350°F.
  2. In bowl, toss together tomatoes, 2 tablespoons oil, the basil, thyme, salt and pepper. Spread on baking sheet; bake 30 minutes.
  3. Drizzle one side of bread slices with remaining 1/2 cup oil. Turn bread slices over; spread each with 2 tablespoons dip.
  4. Divide roast beef and roasted tomatoes evenly among 4 slices bread. Top each of remaining 4 slices bread with 2 slices cheese.
  5. Assemble sandwiches; grill on sandwich press until the bread is toasted golden brown and cheese is melted. Cut sandwiches on diagonal to serve.
