Ingredients:

2 Roma tomatoes, cored and cut in half lengthwise

1 teaspoon chopped fresh basil

1 teaspoon chopped fresh thyme

8 slices multigrain bread

1/2 cup spinach and artichoke dip

1/2 pound DI LUSSO® Roast Beef, sliced

8 slices DI LUSSO® Provolone Cheese

2 tablespoons plus 1/2 cup light olive oil, divided

Salt and pepper, to taste
Procedure:

Heat oven to 350°F.

In bowl, toss together tomatoes, 2 tablespoons oil, the basil, thyme, salt and pepper. Spread on baking sheet; bake 30 minutes.

Drizzle one side of bread slices with remaining 1/2 cup oil. Turn bread slices over; spread each with 2 tablespoons dip.

Divide roast beef and roasted tomatoes evenly among 4 slices bread. Top each of remaining 4 slices bread with 2 slices cheese.

Assemble sandwiches; grill on sandwich press until the bread is toasted golden brown and cheese is melted. Cut sandwiches on diagonal to serve.
