Ingredients:

  • 8 slices Italian or rustic bread, 4 to 5 days old, crust removed
  • 3 medium tomatoes, coarsely diced
  • 12 DI LUSSO® Pitted Kalamata Olives, quartered
  • 1 medium red onion, minced
  • 1/3 cup prepared vinaigrette
  • 12 large fresh basil leaves

Procedure:

  1. Tear the bread into pieces and soak in a bowl of cold water for 2 to 3 minutes.
  2. Drain and squeeze the bread dry, removing all the water.
  3. Place the bread in a large bowl and break it up into smaller pieces with a fork.
  4. Set aside.
  5. In a small bowl, combine tomatoes, olives, onions, vinaigrette and stir gently.
  6. Add the vinaigrette mixture to the bread pieces and combine well.
  7. Shred basil leaves and add to the mixture.
  8. Add ham strips and mix gently to combine.
