Garden of Turkey Delights

Sunflower seed bread, sliced DI LUSSO® smoked turkey, baby Swiss cheese, light scallion and herb yogurt sauce with cucumbers, daikon radish sprouts and a zesty yellow pepper-kalamata salad make this a hearty, healthy favorite.

Ingredients:

  • 8 slices sunflower seed bread
  • 24 slices seedless European cucumber
  • 1/2 cup daikon radish sprouts, trimmed
  • 1/4 cup sliced green onions
  • 1 tablespoon chopped fresh dillweed
  • 1/4 yellow bell pepper, finely diced
  • 1/3 cup DI LUSSO® Kalamata Olives, sliced
  • 2 tablespoons tomato relish
  • 2 teaspoons chopped fresh basil
  • 1/2 cup plain low-fat yogurt
  • 3 tablespoons olive oil

Procedure:

  1. To make yogurt sauce, in bowl, combine yogurt, onion and dillweed.
  2. To make yellow pepper-kalamata salad, in bowl, combine bell pepper, olives, oil, relish and basil; mix well.
  3. Spread one side each slice bread with yogurt sauce. Divide turkey, cheese, cucumber, yellow pepper-kalamata salad and sprouts evenly among 4 slices bread. Cover with remaining slices bread. Cut sandwiches in half to serve.
