Ingredients:

  • 1 (6-ounce) can marinated artichoke hearts, drained, marinade reserved and artichokes sliced
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 1/3 cup chopped fresh parsley
  • 1 tablespoon minced fresh oreagno
  • 2 cloves garlic, minced
  • 1 bag romaine lettuce
  • 1/4 pound DI LUSSO® Deli Meats and Cheese, Black Forest Ham, sliced
  • 1/4 pound DI LUSSO® Provolone Cheese, cut into 2-inch strips
  • 4 ounces Hormel® Pepperoni
  • 1 red onion, sliced and separated into rings
  • 1 zucchini, julienned
  • Sliced red bell pepper

Procedure:

  1. To make vinaigrette, in jar with tight-fitting lid, combine artichoke marinade, vinegar, oil, parsley, oregano and garlic; seal jar. Shake vigorously.
  2. On serving platter, attractively layer and arrange lettuce, artichokes, ham, cheese, pepperoni, bell pepper, onion and zucchini. Drizzle with vinaigrette to serve.
