Ingredients:
1 (9-ounce) package refrigerated cheese tortellini
1/4 cup extra-virgin olive oil
1/4 cup balsamic vinegar
1 1/2 tablespoons grainy Dijon mustard
1 tablespoon sugar
1 tablespoon Worcestershire sauce
1 teaspoon salt
1 teaspoon pepper
2 cloves garlic, minced
1/2 cup chopped green onions
1/2 cup chopped celery
1/2 cup chopped peeled cucumber
1/2 cup broccoli florets
1/2 cup grape tomatoes, cut in half
1/2 cup chopped fresh Italian parsley
1/4 pound DI LUSSO® Julienne Ham Strips
1/4 pound DI LUSSO® Deli Meats and Cheese, Colby Jack Cheese, diced
Hot pepper sauce
Shredded Parmesan cheese
Procedure:
Cook tortellini according to package directions; drain. Rinse under cold running water; drain again.
In large bowl, combine tortellini and oil; stir to coat.
To make dressing, in separate bowl, stir together vinegar, mustard, sugar, Worcestershire sauce, salt, black pepper, garlic and hot sauce; whisk to mix well.
Add dressing, chopped vegetables, parlsey, ham and Colby-Jack cheese to tortellini; mix gently. Cover; refrigerate 8 to 12 hours to allow flavors to blend. Garnish with Parmesan cheese before serving, if desired.
