Ingredients:

  • 1 (9-ounce) package refrigerated cheese tortellini
  • 1/4 cup extra-virgin olive oil
  • 1/4 cup balsamic vinegar
  • 1 1/2 tablespoons grainy Dijon mustard
  • 1 tablespoon sugar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 cloves garlic, minced
  • 1/2 cup chopped green onions
  • 1/2 cup chopped celery
  • 1/2 cup chopped peeled cucumber
  • 1/2 cup broccoli florets
  • 1/2 cup grape tomatoes, cut in half
  • 1/2 cup chopped fresh Italian parsley
  • 1/4 pound DI LUSSO® Julienne Ham Strips
  • 1/4 pound DI LUSSO® Deli Meats and Cheese, Colby Jack Cheese, diced
  • Hot pepper sauce
  • Shredded Parmesan cheese

Procedure:

  1. Cook tortellini according to package directions; drain. Rinse under cold running water; drain again.
  2. In large bowl, combine tortellini and oil; stir to coat.
  3. To make dressing, in separate bowl, stir together vinegar, mustard, sugar, Worcestershire sauce, salt, black pepper, garlic and hot sauce; whisk to mix well.
  4. Add dressing, chopped vegetables, parlsey, ham and Colby-Jack cheese to tortellini; mix gently. Cover; refrigerate 8 to 12 hours to allow flavors to blend. Garnish with Parmesan cheese before serving, if desired.
