Ingredients:

  • 1/2 cup thinly sliced onion
  • 1/2 cup sliced fresh mushrooms
  • 1/2 cup sliced zucchini
  • 1 teaspoon butter
  • 1/4 pound DI LUSSO® Deli Meats and Cheese, prosciutto, chopped
  • 1 tablespoon chopped fresh parsley
  • 1/4 teaspoon dried rosemary leaves, crushed
  • 1/4 teaspoon dried sage leaves
  • 4 large eggs
  • 1 cup shredded mozzarella cheese
  • 1/4 cup milk

Procedure:

  1. Heat broiler.
  2. In skillet with ovenproof handle, sauté onion, mushrooms and zucchini in butter until tender. Add prosciutto, parsley, rosemary and sage. Sauté 1 minute; reduce heat to low.
  3. In small bowl, beat together eggs and milk. Add egg mixture to skillet; cook, without stirring, 8 to 10 minutes or until egg is almost set. Sprinkle with cheese.
  4. Broil frittata 4 inches from heat source 1 to 2 minutes or until cheese is golden brown. Cut into wedges to serve.
