Garden Frittata

Ingredients:

  • 1/2 cup thinly sliced onion
  • 1/2 cup sliced mushrooms
  • 1/2 cup sliced zucchini
  • 1 teaspoon butter
  • 1/4 pound DI LUSSO® Deli Meats and Cheese, prosciutto, chopped
  • 1 tablespoon chopped parsley
  • 1/4 teaspoon dried rosemary, crushed
  • 1/4 teaspoon sage
  • 4 eggs
  • 1 cup shredded mozzarella cheese
  • 1/4 cup milk

Procedure:

  1. Heat broiler.
  2. In skillet with oven-proof handle, sauté onion, mushrooms and zucchini in butter until tender.
  3. Add prosciutto, parsley, rosemary, and sage. Sauté 1 minute; reduce heat to low.
  4. In small bowl, beat together eggs and milk. Add egg mixture to skillet. Cook eggs 8 to 10 minutes or until egg is almost set. Do not stir.
  5. Sprinkle cheese over egg.
  6. Broil 4 inches from heat source 1 to 2 minutes or until cheese is golden brown.
  7. Cut into wedges to serve.
