Fettuccine in Prosciutto Cream Sauce

Ingredients:

  • 1 pound fresh mushrooms, sliced
  • 3 tablespoons butter
  • 3 tablespoons olive oil
  • 1/4 pound DI LUSSO® Deli Meats and Cheese, prosciutto, chopped
  • 1 cup whipping cream
  • 1/4 teaspoon ground nutmeg
  • 1 (9-ounce) package spinach fettuccine, cooked and drained
  • 1/4 teaspoon coarsely ground pepper
  • 3/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley

Procedure:

  1. In large skillet, sauté mushrooms in butter and oil until tender. Add prosciutto, cream and nutmeg. Cook over medium heat 4 to 5 minutes or until slightly thickened.
  2. In bowl, combine fettuccine, prosciutto mixture, 1/2 cup cheese and the pepper; toss to combine. Transfer fettuccine to large serving platter. Sprinkle with remaining 1/4 cup cheese and the parsley.
