Fettuccini in Prosciutto Cream Sauce

Ingredients:

  • 1 pound fresh mushrooms, sliced
  • 3 tablespoons butter
  • 3 tablespoons olive oil
  • 1/4 pound DI LUSSO® Deli Meats and Cheese, prosciutto, chopped
  • 1 cup heavy cream
  • 1/4 teaspoon nutmeg
  • 1 (9-ounce) package spinach fettuccini, cooked
  • 1/4 teaspoon black pepper, coarsely ground
  • 3/4 cup grated Parmesan cheese, divided
  • 1/4 cup chopped parsley

Procedure:

  1. In large skillet, sauté mushrooms in butter and olive oil until tender.
  2. Add prosciutto, cream and nutmeg. Cook over medium heat 4 to 5 minutes or until mixture is slightly thickened.
  3. In bowl, combine fettuccini, prosciutto mixture, pepper and 1/2 cup cheese; toss to combine.
  4. Transfer fettuccini to large serving platter. Sprinkle with remaining cheese and parsley.
