Cream of Prosciutto Soup

Ingredients:

  • 1/4 cup butter
  • 1/4 cup finely chopped onion
  • 1 cup quick-cooking barley
  • 5 1/2 cups chicken broth
  • 1/2 pound DI LUSSO® Deli Meats and Cheese, prosciutto, cut into thin slivers
  • 1/4 teaspoon white pepper
  • 1 cup whipping cream
  • 1 (10-ounce) package frozen tiny peas, thawed
  • 1 cup shredded Parmesan cheese
  • Freshly grated nutmeg

Procedure:

  1. In large saucepan, melt butter over medium heat. Add onion; cook 3 to 5 minutes or until onion tender. Add barley; cook, stirring, until lightly golden.
  2. Stir broth, prosciutto and white pepper into saucepan; bring to a boil. Reduce heat; cover. Smmer 30 minutes or until barley is tender. Stir in cream and peas. Cook until heated thoroughly.
  3. Divide soup evenly among 8 bowls. Top each serving with cheese and sprinkle of nutmeg.
