Di Lusso Hot Italian Potato Salad

Ingredients:

  • 1 1/2 pounds potatoes (about 4 medium), cut in half
  • 2 tablespoons butter
  • 1 cup chopped green onions
  • 1 cup sliced fresh mushrooms
  • 2 tablespoons all-purpose flour
  • 1/2 cup water
  • 1/2 cup white wine
  • 1/2 cup vinegar
  • 4 ounces DI LUSSO® Deli Meats and Cheese, pepperoni, cut into thin strips

Procedure:

  1. In large saucepan, bring 1 inch water to a boil. Add potatoes; return to a boil. Reduce heat; cover. Cook potatoes 20 to 25 minutes or until tender. Drain potatoes; cool slightly.
  2. Meanwhile, in large skillet, melt butter. Add onions and mushrooms; cook, stirring, 4 to 5 minutes or until tender. Whisk in flour. Cook over low heat, stirring constantly, until mixture is bubbly; remove from heat.
  3. Stir water, wine and vinegar into skillet. Return to stovetop; bring to a boil, stirring constantly. Boil, stirring, 1 minute; remove from heat.
  4. Slice warm potatoes; add to skillet. Cook, stirring gently to coat, until hot and bubbly. Toss in pepperoni just before serving.
