Aegean Salad with Pepperoni

Ingredients:

  • 2 cups dry cavatelli pasta or medium pasta shells
  • 1/2 cup chopped celery
  • 1/2 cup DI LUSSO® Pitted Kalamata Olives
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup Greek or Italian salad dressing
  • 1/2 cup nonfat plain yogurt
  • 1 tablespoon chopped fresh oregano or 1 1/2 teaspoons dried oregano leaves
  • 3/4 teaspoon pepper
  • 1 cup DI LUSSO® Deli Meats and Cheese, pepperoni, sliced
  • 1 tomato, chopped
  • 1/2 cup crumbled feta cheese

Procedure:

  1. Cook pasta according to package directions; drain. Rinse under cold running water; drain again.
  2. In large bowl, combine pasta, celery, olives and Parmesan cheese.
  3. In small bowl, combine dressing, yogurt, oregano and pepper; mix well. Toss with pasta mixture until well combined; cover. Refrigerate 1 to 2 hours. Fold in pepperoni, tomato and feta cheese before serving.
