Ingredients:

  • 1 (4.5-ounce) package DI LUSSO® Pitted Kalamata Olives, coarsely chopped
  • 1 (6-ounce) jar sliced pimiento-stuffed green olives
  • 1/4 cup chopped red onion
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh Italian parsley
  • 1/3 cup plus 2 tablespoons Italian salad dressing, divided
  • 1 (10- to 12-inch) whole focaccia bread
  • 1/2 pound DI LUSSO® Deli Meats and Cheese, hard salami, sliced
  • 1/4 pound DI LUSSO® Provolone Cheese, thinly sliced
  • 1 (8-ounce) package DI LUSSO® Roasted Sweet Red Pepper Strips, drained and patted dry
  • 1 green bell pepper, thinly sliced into rings

Procedure:

  1. In bowl, combine olives, onion, garlic, parsley and 1/3 cup dressing; mix well.
  2. Slice focaccia bread in half horizontally. Drizzle cut sides of bread with remaining 2 tablespoons dressing.
  3. Top bottom half of focaccia with salami, cheese, roasted peppers, bell pepper and olive mixture. Place top of focaccia over filling; wrap in aluminum foil. Refrigerate until serving time.
  4. Heat oven to 350°F.
  5. Place wrapped focaccia on baking sheet. Bake 25 to 30 minutes or until heated thoroughly. Unwrap sandwich; let stand 5 minutes. Cut into wedges to serve.
