Ingredients:

  • 8 slices multigrain bread
  • 1/2 cup spinach and artichoke dip
  • 2 Roma tomatoes, cored and split lengthwise
  • 1 teaspoon chopped fresh basil
  • 1 teaspoon chopped fresh thyme
  • 2 tablespoons plus 1/2 cup olive oil, divided
  • 1/2 pound DI LUSSO® Roast Beef
  • 8 (1-ounce) slices DI LUSSO® Provolone Cheese
  • Freshly ground pepper, to taste
  • Sea salt, to taste

Procedure:

  1. Heat oven to 350°F.
  2. In bowl, toss together tomatoes, 2 tablespoons oil, the basil, thyme, salt and pepper. Spread on baking sheet. Bake 20 minutes.
  3. Drizzle one side of bread slices with remaining 1/2 cup oil. Turn slices over; spread each evenly with dip. Divide roast beef and tomatoes evenly among 4 slices bread. Top each of remaining 4 slices bread with 2 slices cheese.
  4. Heat sandwich press. Assemble sandwiches. Grill on sandwich press until bread is toasted golden brown and cheese is melted. Cut sandwiches diagonally to serve.
